Weather you are a vegetarian or you will be having vegetarian guests over for the holidays you will need a dish that makes you or your vegetarian guests feel special. Broccoli and Cheese strata is the perfect dish, and one that your other guests provided they like broccoli will enjoy as well. Broccoli and Cheese Strata 4 Cups broccoli flowerets 8 Slices firm whole wheat bread, (be sure it is normal sized and not extra thick or extra thin) 2 tablespoon unsalted butter 2 Cup shredded Mexican Style cheese 3 cups skim or 1% milk 4 eggs 4 egg whites 3/4 tsp. salt 3/4 tsp. Crushed red pepper flakes 2pinches of ground black pepper Precook the broccoli for 10 minutes in boiling water. In the mean time pre-heat your oven to 350. Spray a 9x13 inch baking dish with non stick cooking spray. Butter all of the pieces of bread on one
side then take 4 of the slices of bread and place them butter side up in the baking dish. Drain the broccoli really well and then scatter it all over the bread in the baking dish. Sprinkle the cheese all over the broccoli. Then place the other 4 slices of bread butter side down on top of the broccoli and cheese. Beat the milk, eggs, egg whites, salt, pepper flakes, and pepper together and then pour the mixture over the bread. Bake in your 350 degree oven for 30 minutes or until the bread has just begun to brown and is a little toasty but be sure not to over cook to the point it becomes as hard a as a rock. If the bread seems to be toasting too quickly cover the pan with foil, then remove the foil for the last 5 minutes of cooking.
